Baby’s Got The Blues….For Cheese!

This cheese is only available once a year, but it's well worth the wait!

Wildcatters always enjoy unique and quality products and experiences. Rogue Creamery in Oregon has just the product, a blue cheese offered only around the autumnal equinox, late September. This cheese is a limited quantities product because the cow milk gathered for this cheese is higher in butterfat because the cows have been grazing on fall rain feed grasses, flowers, and clover. The milk is then collected, crafted, and wrapped in macerated organic pear liqueur soaked Syrah grape leaves. The cheese is aged and released around the Fall Equinox. This award winning cheese recipe is only available from the Rogue Creamery, which recently was USDA Certified Organic. This cheese pairs beautifully with a Gewürztraminer wine. All this magic is not cheap, but this blue cheese has been tested by a panel of Wildcatter cheese lovers and it passed with flying colors…blue colors!
